SOUTH INDIAN FILTER
The traditional South Indian Filter coffee is a beverage made by infusing frothed milk with a coffee decoction. Also referred to as ‘Madras filter coffee’, this rich, milky brew makes for a comforting cup of hot coffee.
What you’ll need:
- South Indian Filter set (including the plunger)
- 18g coffee (approximately 9 teaspoons) in South Indian Filter grind
- 100ml water (⅖ cup) at 95°C (1:30 minutes off boil)
- Scales, if possible, otherwise follow eye measurements
- Add 18g coffee powder in the upper chamber of the filter.
- Place it over the lower chamber where the coffee decoction is to be collected.
- Use the plunger to level the coffee grinds, and leave the plunger on top
- Pour 100ml hot water in the top chamber ensuring the plunger stays in place
- Place the lid and let it drip through over 9:30 to 10 minutes.
- Take 50 ml coffee and add 60 ml of hot milk or 50 ml of hot water
- Add sugar to your liking
- Water temperature should be higher compared to the other brewing methods. This will help to retain the water temperature at an optimum level which is required for a consistent brew
- Use the plunger only to level the coffee grounds, no pressure is needed
- Keep the lid on chamber for the entire brew time to prevent temperature loss
- This is a strong decoction which can make 2-3 cups, save the remaining brew in the fridge for up to 3 days
- To achieve the traditional foam on top, pass the brew from one vessel to another at a height enough to create bubbles
